Vegetarian Duck Sauce

1/2 cup peach or apricot preserves
1/4 cup vinegar
1 tablespoon grated ginger
1/3 cup chopped scallions
 
Combine the preserves, vinegar and ginger. Heat sauce to a gentle simmer. Simmer while stirring occasionally, for at least 5 minutes. Remove from the heat and stir in the chopped scallions. Serve cool or chilled.
